Assessment is based on level of experience and responsibility in combination with examinations with the successful candidate being certified in one of five categories:

| - Certified Professional Chef | CPC |
| - Certified Chef de Cuisine | CCC |
| - Certified Executive Chef | CEC |
| - Certified Master Chef | CMC |
