Ristretto is the Italian word for restricted.

Ristretto Shot : Refers to an espresso shot that is pulled short, or has less water in it.

A standard shot of espresso is approximately one oz. By comparison a ristretto shot would most likely have about 3/4 of an oz. in volume.
