Bain- marie:

1. a water bath, a piece of equipment that may use hot water to maintain hot food.

2. a "dry" Bain-marie uses only heated air.

3. To gently cook products.

4. A pot with hot water under a bowl.

5. In Kitchen colloquialism, it is sometimes referred to as the Container itself. The stainless steel 'pot' that is placed in the hot water. Of various sizes.
