Anzac biscuits

(Australian colloquial culinary term) These are named in honour of the ANZACs (men of the Australian and New Zealand Army Corps at the time of the Gallipoli) An adaptation of the Scottish oatmeal parkin, they were ideal for sending to the troops because they could be cooked on any kind of stove, and were made with rolled oats, coconut, flour, sugar golden syrup and bicarb of soda and without eggs which were in short supply, and kept extremely well
