The Salonculinaire Master Chef and World Championships in Culinary Knowledge is the premier global test of professional chefs culinary knowledge.
The Salonculinaire Master Chef program has been on the internet for 7 years and hundreds of chefs have attempted the challenge. The series of tests get progressively harder and stretch the limits of participants excepting the most knowledgeable.
Candidates must prove they have a general global knowledge of : Basic Food Preparations - Butchery and Meat Cookery - Culinary Terminology - Eggs and Farinaceous - Equipment and Tools - Fish and Shellfish - Fish Cuts - Fish Recognition - Food Science - Fruit, Herbs and Spices - Global Preparations - Hot and Cold Desserts and Sweets - Hygiene and HACCP - International Dishes - Larder and Buffet - Menu planning - Methods of Cookery - Mise - en - place - Nutrition - Occupational Health and Safety - Pastry - Cakes - Yeast - Potato - Poultry and Game - Product Knowledge - Salads and Dressings -Sandwiches, Canapés, Finger Foods and Hors d'oeuvres - Stock Soups and Sauces -Vegetables and Fungi - Kitchen Administration and more in order to pass the exams.
Candidates need to be completely focused, confident and diligent as the test is not forgiving. Those who achieve this level are only to be highly commended as exceptional.
The highest score is deemed World Champion and retains the title until beaten
Current World Champion Glenn Humphrey: CEC, CCE – USA - who attained the title in June 2010 and has held the title against challengers ever since by a margin of 4%
